BACKGROUND: “I have been in the restaurant business since I was 14 years old. I worked myself up to assistant executive chef at the Gold Coast Casino. I was in the business to make my own name and become a chef. From there I went to a high-end Italian restaurant, where I became executive chef within three months. After that, I opened two high-end steak houses before coming here.”

FIRST JOB: “My first job was being a dishwasher at the Gold Coast.”

YEARS IN BUSINESS: “I have been in the restaurant business 28 years. I love the creating and the camaraderie of restaurants. I love everything about this business and it’s a feeling of accomplishment.”

PERSONAL: “We love hot rods and we love food. I love building old cars and restaurants.”

BUSINESS CLIMATE: “The climate is great for our restaurants. We actually have a loyal clientele base. We do very little advertising. It’s a lot of word of mouth. We have a great reputation and it is because we always have a family member here that has some interest in the family. We put in 100 percent of a quality product.”
